A Culinary Philosophy
Ember & Oak was born from Executive Chef Marcus Rivera's vision of a restaurant where the food tells a story. After 15 years honing his craft in New York, Paris, and São Paulo, Chef Rivera brought his philosophy back to Portland: respect the ingredient, honor the technique, surprise the palate.
Our menu changes with the seasons. We source 80% of our produce from within 50 miles and maintain direct relationships with every farm and fishery we partner with. The result is a dining experience that feels both timeless and entirely of the moment.
